quick vegetarian lasagne
· vegetarian
· super easy
· serves 2

INGREDIENTS:
· 2 teaspoons olive oil
· 500gm fresh ricotta cheese
· 1 bottle tomato pasta sauce
· 2 big handfuls baby spinach
· 1 packet fresh lasagne sheets
· sea salt and freshly ground pepper
· ¾ cup grated mozzarella cheese
· green salad, to serve

DIRECTIONS:
1. Preheat oven to 355 degrees F (180 degrees C).
2. Grease a small baking dish, or even a rectangular cake tin.
3. Mash ricotta lightly in a bowl, and season well with salt and pepper.
4. Put a thin layer of tomato sauce in the base of the baking dish. Follow with a layer of the ricotta, then one handful of spinach and finish with the lasagne sheets (you may have to cut these to fit). Repeat this once, so you have two layers of everything. You won’t use all of the tomato sauce or lasagne sheets, so save these for another time.
5. Cover the top generously with cheese.
6. Bake in the oven for as long as the lasagne packet instructions specify. If the cheese browns too much, cover with a layer of foil.
7. Slice, and serve with a green salad.
