grilled mushrooms
· vegetarian
· easy
· serves 2

INGREDIENTS:
· 8 button mushrooms
· 2 tablespoons extra virgin olive oil
· 4 teaspoons store-bought pesto
· 4 teaspoons store-bought olive tapanade
· 8 teaspoons parmesan cheese.

DIRECTIONS:
1. Preheat grill (broiler).
2. Wipe the mushrooms with a clean, damp cloth to clean the skin, and remove the stalks entirely.
3. Brush mushrooms with olive oil and place, cup side up, underneath the griller, until they start to soften.
3. Take the mushrooms out. Place a teaspoon of pesto in four of them, and a teaspoon of olive tapenade in the other four. Place a teaspoon of parmesan cheese on all the mushrooms, and return to the griller until the cheese is melted and bubbly.

NOTE
these go great as a side dish with eggplant with tomato and basil.
