Right now I have one Sim who owns 5 businesses, she has the LTW to own 5 level 10 businesses. She has all of her businesses at the very least at a level 5 right now. She has earned Perk Points apparently

First of all, I use a lot of cheats to get there and I play the whole game with a lot of cheats.
This is what I did :
1.) Made two houses with 8 Sims.
2.) Maxed all 16 Sims to the fullest using BoolProp cheat (skills, hobbies, personality stats, badges (gold), etc.)
3.) Using BoolProp tool, made all 16 "know everyone" and "make friends for me" at mailbox.
4.) At community lot, had my Sim business owner call them on the phone. At two of the bigger businesses she hired 3 of them, arbitrarily since they are all mostly the same, at two of the businesses she hired 2 of them, and at one business (the largest one) she hired 4 of them.
5.) Thus, I have 2 of those Sims currently not hired, I wanted to see which business needed an extra person working the most first. I am about to place the last 2 workers at the businesses that need them.
6.) The businesses with 2 workers I appoint one worker to be the cashier, one worker to be the manager. The manager does it all; they manage, sell, restock, etc.
7.) The businesses with 3 workers I appoint one worker to be the cashier, one worker to be restocker, one worker to be the manager. The manager does it all; they manage, sell, restock, etc.
8.) The largest business with 4 workers I appoint one worker to be the cashier, one worker to be restocker, one worker to sell, one worker to be the manager. The manager does it all; they manage, sell, restock, etc.
That's that. Someone said I could run the business from home, but I am not that far yet. I haven't figured out how to do that yet. I just went from one business to the other rebuying everything at wholesale, calling the Sims I created, appointing them, and then doing it all over. I am about to appoint the last 2 Sims when I hire them, and have her go home.
I was running these businesses with NPCs, but it didn't work as well. I even made them selectable, using BoolProp, to also max them out. It got better since they then had all gold badges and skills, but I hated how they looked. LOL.
I've had bad experiences with NPCs assigned to sales, but mostly because they tend to use "stronger" interactions and get rebuffed because the customers don't know them well enough to be comfortable with that - but if they're already friends with everyone, I can see how it could work out!
Someone said I could run the business from home, but I am not that far yet. I haven't figured out how to do that yet.
IIRC, all you need is to have a manager in that store. Then you can call the store on the phone and talk to the manager and he'll report, and you'll still get money even though you didn't visit the store in person that day. (But the money will go down slowly - 30% a day if you don't call the manager, 10% for each day that you do IIRC - so you do have to show up in person every once in a while.)
