Stanza, which uploads pdfs/word docs/html files/text or rtf files as readable, which basically means I can carry around about eight billion ebooks in my pocket (LOVE. IT.).
Oh, and I don't use them, but you would: Tipulator, iTip Pro, or similar are tip calculating apps.
Among the things it came with: iPod, Safari, Mail, text messages, phone, contact list. Maps. (and directions) (But on mine at least, this uses up the battery fast.) Weather in different cities where my people live and where I plan to travel soon. Notes Camera Alarm clock

Since I don't tend to carry another iPod around any more, the memory of my iPhone is mostly filled up with music, meaning that to try out a new "app" I need to decide what music I don't want to listen to.
What eBuddy does is not the kind of text messaging that a phone does. It does instant messaging. Like AIM and MSN and Google Talk and Facebook-messaging.
I use free apps that I like a lot: IM Lite, Twitterific, and Instapaper (which lets you bookmark websites and saves them as readable plain text on your iphone for later perusal.)
I'm using an iPod Touch, not an iPhone; the apps I like are:
Twitterrific, Urban Spoon, Scramble (but only because I'm kind of totally addicted to that game), Pandora Radio (but that probably doesn't work in Canada). The facebook app is adequate for checking facebook at work, when I can't check it using a regular computer, but it's not spectacular.
