i worked 9 days in a row, and the last two were 8 hours apart. holy shiza.
tomorrow will be chill day, i havent decided what to do, but in the evening, Jesse and I are taking his dad to El Gaucho for some fine dining and drinking at happy hour! After, I plan on making my interpretation of my friend Eileen's summer pizza, except with fruit instead of vegetables. Its quite simple actually, kind of one of those Sandra Lee Semi-Homemade things.
What you need:
flaky biscuit dough from a tube
Mascarpone Cheese
Creme Fresh (accent grave)
Sliced Fruit
What to do:
-place the biscuit slices in a cake pan
-flatten them out by pulling them. you want them to become one whole biscuit.
-bake as directed.
-while its baking, slice the fruit in small chunks and set aside.
-mix the creme fresh and mascarpone cheese so its soft and pliable. its best if its slightly warmer than fridge temperature.
-when the biscuits are done, let them cool. press them down to flatten and flip.
-spread the creme/cheese mixture on the biscuits and sprinkle the fruit on top!
