a few weeks ago, darkphuque taught enzie how to make her own country-style macedonian phyllo. they used the resulting dough to make a meat-and-onion pita.



it baked up beautifully, golden brown and with layers baked so crisply that they crunched loudly.



the pita was served with tomatoes fresh from the farmers' market, deep red all the way through and heavy with juice, sugar, and savor.



it was a wonderful meal.
