I feel like discussing cooking and work. I applied for Metropol thinking that I would be getting a job serving. But when Wendy first talked with me about the possibility of cooking, I was completely sold on the idea. I'm very fortunate to have come into a situation where there is such a deep commitment to learning at all levels, and an unwavering respect for each other and for the food/cooking process. Furthermore, I'm lucky to have the chance to work under one of the best chefs in the city.

We have a tiny, tiny kitchen. It's easily smaller than my apartment, maybe by half! There are three positions: "lead" is saute; "shotgun" is side veg, appetizers, expediting, and dishwashing; and "carseat" is pantry (salads and desserts in our case) and dishwashing. I've worked all three positions, but currently, I'm pretty much shotgun all the way. It's a lot of work, but it's so much fun! It's less stressful than lead (I'm still very green at lead!), but it's more involved and dynamic than carseat.

I love food. I love cooking. I love trying to work out flavor profiles in order to create a harmonious hen/fish/whatever special. I love enhancing the visual appeal of the dish--both through color and through plating composition. But what's really the best is that I've fallen into a fucking WONDERFUL group of people. That makes all the difference.

I found out the other day that John (...Foster, AKA "The Godfather," Wendy's mentor, easily one of the best chefs in the state) told Wendy that I've got "it." I really couldn't have asked for a higher compliment. I was totally floored. I hope I can live up to his expectations!

So yes, I love food...now I'm going to go order Pizza Hut. Hell yes.
