Today I picked a bunch of corn. We have been having it with dinner for the past week. I would guess that we've harvested about half the crop. I boiled up 7 ears and cut the kernels off the cob to freeze for later, this got me about 3/4 of a quart freezer bag. I read some other people homesteading who have 80 quarts to make it through the winter and they set up a big assembly line with their kids to shuck, boil, cut, pack, freeze. I like the idea of having your own homegrown food throughout winter (like tomato sauce I will get to make soon) but man, 80 bags, that's the sort of thing you can get done if you don't have a job to go to.
I may soon jump to day shift which will probably help my glum summery mood. It's winding down here, I remember a month ago being able to go outside at 4:30 AM and see a little. Now it's 5:30 and still dark out.
Now that I've figured out how to cook rice well consistently, I'm completely hooked on jasmine rice but it doesn't go the best with Mexican food.
