I picked a bad week to try to eat raw! I forgot Thanksgiving is in 2 days. Damn. This wasn't really an effort to convert to raw but just to start focusing on fruits and vegetables more.
Last night I went to the co-op and loaded up on:
- sunflower seeds
- walnuts
- tomatoes
- honeycrisp apples (minimally treated)
- bartlett pears
- boston lettuce
- red leafed lettuce
- meyers lemons
- green peppers
- Annie's Woodstock (tomato/tahini) dressing
- cucumbers
- peanut butter
- avocados
- hearts of palm
I figured I could do a mix of lettuce salads with nuts and avocado/tomato salads or pear/walnut salads or peppers with dressing as dipping sauce, etc. The whole point was to really focus on fruits and vegetables because I keep eating protein sources &/or processed shit and then no vegetables. I did have a bit of dark chocolate with my vitamins last night (I need to eat something with vitamins OR ELSE and I'd already eaten like 15 walnuts).
So far I've had a pear for breakfast and a hummus/celery/baby carrots "dipstix" thingie from work for a snack. For lunch I have a green leaf lettuce salad with cucumbers, tomatoes, sunflower seeds and Woodstock dressing for lunch. And then a honeycrisp as an afternoon snack.
