I had to answer a question about cousinhood a few months ago; a first cousin is when your parent's sibling has a child. A first cousin once removed is your parent's first cousin -- your cousin, one generation removed. Your first cousin once-removed's child is your second cousin. Your parent's second cousin is your second cousin once removed, and their child is your third cousin, &c. Your grandparent's first cousin is your first cousin twice removed, &c. It also works in reverse, so your second cousin is your parent's first cousin once removed.

I was sorry to hear about your grandma, but glad to hear how well your family is taking it.
