The Great One’s Weekly Recipe
Now, these recipes are all original. I did not take them out of any book. They are created just by me screwing around in the kitchen and guessing at what will work right. I’ll occasionally post one of my flops and ask if people can suggest ways to fix it, but mostly I’ll post the ones I like. All recipes have been cooked and eaten by myself and my wife.
Recipe Ratings:
0 Stars means okay but not something to sing about
1 Star means that I liked it and will make it again.
2 Stars means my wife liked it as well, and asked me to make it again.
3 Stars means it has been made and appreciated by friends/family
4 Stars means that friends and family request the dish
5 Stars means the recipe won an award (I have none of these)

Recipe #2
Wild Rice and Beef Pilaf

Serves 4
Ingredients:
Rice:
1 cup dry Wild Rice (not the instant type, the type that takes 45 minutes)
2 Cups water
1 tbl Smart Balance Buttery Spread
Filling:
1 lbs lean ground beef (or ground turkey/pork)
1 can diced tomatoes (do not drain)
1 cup frozen chopped broccoli (or whatever vegetable you like)
1/2 cup sliced mushrooms (optional when my wife is eating)
1 medium onion diced
2 cloves garlic, diced
1 tbl olive oil
2 tbl Montreal Steak Seasoning
1 tsp cayenne pepper
1 tbl worcestershire sauce
salt and pepper to taste
Directions:
Rice:
In a medium sauce pan, bring water, rice, and butter to a boil. Reduce to simmer and cover. Let cook 45 minutes.
Filling:
Add oil onion and garlic to a large pre-heated frying pan over medium-high heat. Cook for 2-3 minutes. Add ground beef and worcestershire sauce and 1 Tbl of the Montreal Steak Seasoning. Cook until beef is browned. You can drain the grease now if you want, but if you get really lean beef (94% or higher), I'd just leave it in for flavor. Add diced tomatoes, mushrooms, broccoli and the rest of the seasonings. Cook for 5-10 minutes on medium heat stirring regularly, until the broccoli is hot. Add rice and cook for 3 minutes, stirring regularly. Eat as a meal or use to stuff vegetables like peppers or as a stuffing for turkey/chicken.
