a letter ryan wrote to a vegan organization (just so you don't all think i'm nutty)
Hello all,
My name is Ryan, and I am planning to open a vegan,
organic, fair trade bakery/flower shop/gift shop/cafe
with my girlfriend. This level of idealism may make me
sound like a person that is not mentally stable, but I
think that the people here would be able to
understand! This is not just a manic state; I am
sincerely wishing to do this.
I am a 21 year-old music therapy student, currently
working at Whole Foods in Philadelphia, but that is
soon to change! I really am looking for direction as
to:
1. Where I should open this within the US or Canada
that would be the most lucrative and necessary. Where
are the largest socially conscious vegan communities
in North America?
2. How to go about funding this sort of thing (what
are my options?)
3. What options there are for learning how to be a
vegan baker on a professional level? I bake on my own
very often but would like/need to know more.
My plans are to have cakes, cookies, muffins, breads,
pastries, fresh flowers and hand made gifts/cards, all
in a cafe setting. I have vegan baking skills, but
would like to know more about presentation and about
making pastries specifically. What classes/seminars
are there?
Any suggestions or comments would be greatly
appreciated!
