Chicken Wings
One of my favorite snack foods is chicken wings. I know a few of you have commented on how you don’t eat chicken off of a bone. Don’t skip this post, just use chicken breast strips. They are just as good and you can use a fork and avoid the bone.
Since I’ll be busy packing and I have to be in bed early on the night of the big game - I’m posting my favorite game snack today.
Buffalo Wings
Italian Wings
Lemon Pepper Wings
Buffalo Wings
Flour
Salt
Pepper
Garlic powder
Combine above ingredients
Note: Make sure your wings are moist enough to hold the flour mixture. If not, rinse then in cold water.
Coat well in the flour mixture and then toss in a large Zip-Lock bag. Store in the refrigerator until ready to bake.
Bake all of the below at 400 degrees until the wings are 180 degrees internally or the juices run clear.
Buffalo Sauce
Use a hot sauce of your choice. Being a southern boy I grew up on Texas Pete
White vinegar
Margarine or butter
(I’m not giving exact amounts because I’m only fixing a few wings).
Italian Wings
Marinate the wings in any Italian salad dressing for at least an hour. I added a few extra dried Italian herbs (Marjoram, Thyme, Rosemary, Sage, Oregano and Basil) to the marinade.
Before you serve, sprinkle them with fresh grated parmesan
Lemon Pepper Wings
Lemon juice, fresh squeezed
Black pepper, ground, fresh
Garlic powder
Marinate the wings in the lemon juice for no more than ½ hour. Before going into the oven, dash with pepper and garlic powder.
You can bake the lemon pepper wings and the Buffalo wings on the same baking sheet. I like to cook the Italian wings in a casserole dish because they are a bit runny at the start.
Before you serve the lemon pepper wings, squeeze some fresh lemon over them.
