1.25-1.5 lbs pork
3 small bell peppers
2 cans of diced tomatoes
1 tbsp chili powder
1 tsp cayenne pepper
3-4 tbsp worshistire
Bacon fat
1 onion
2 cloves garlic
1/2 cup dried black beans, soaked
Sweatted pepper and onions for 20 minutes in 1 tbsp bacon fat, removed from pot
Browned pork very well, past the point where there was steam coming from the pot
Added spices and garlic, stirred for 30 seconds.
Added cans of tomatoes
Re-added things, sauce. Cooked 2 hours at 350.
Seasoned.
Cooked beans at simmer for one hour, in a seperate pot.
Added beans to pot. Used to sauce a casserole. Delicious.
For Next time
Add beans to cooking liquid. I was going to make them a layer on their own, but I ended up adding them to the pot anyway.
Use crushed or pureed or sliced (by me) whole tomatoes next time. Large chunks in the diced can were unpleasant. I think they must use something to make them retain their shape, because no sliced, whole tomato would have survived that process.
