Blueberry Apple Muffin

Nov 06, 2007 15:58

I have decided that I do not fancy cinnamon or blueberries. I attempted to bake blueberry apple muffins today and it didn't turn out too good. I think I misread the recipe and added 2 tablespoons of baking powder and 1 tablespoon of ground cinnamon instead of teaspoon! -smacks forehead-

Anyhow, for those interested, here's the recipe.

Muffin (Blueberry and Apple)
Makes 6 large muffins

Preheat oven to 180 degrees
Combine 2 eggs, 2 tablespoons honey, 1 tablespoon caster (superfine) sugar and 3 tablespoons vegetable oil in a large bowl
Whisk together until the ingredients are just combined
Cut 1 green apple in half and grate one half
Add the grated apple to the bowl along with 185ml (3/4 cup) milk and 150g (1 cup) blueberries and stir together

Sift 250g (2 cups) plain (all-purpose) flour, 1teaspoon ground cinnamon and 2 teaspoons baking powder into a bowl
Lightly fold the dry ingredients into the muffin mixture
Spoon the batter into a 6-hole muffin tin

Finely slice the remaining half of the apple and put the slices on top of the muffins
Sprinkle each muffin with a little caster (superfine) sugar and then bake for 30 minutes, or until the tops are golden.

And here are the pictures :)
