Original Recipe #7: Quail with Lavender and Honey

Quail with Lavender and Honey

Ingredients:
For the quail:
2+1+1 teaspoons lavender blossoms (preferably fresh, can be dried)
1 tablespoon fresh thyme leaves
1 1/2 teaspoons coarse sea salt
1/4 teaspoon black peppercorns
4 large quail
2 tablespoons duck fat or butter ghee
4-5 tablespoons lavender blossom or thyme honey
250 ml red wine
1 tablespoon benedictine
gelatine or cornstarch if necessary

For the mint and lemon green beans:
1 large green bell pepper
250g green beans, trimmed
juice of half a lemon
100ml best quality spanish extra virgin olive oil (such as Baena Germain or Cinguenta Siglos)
1 handful pineapple mint (or peppermint or grapefruit mint), shredded
salt, sugar, and ground black pepper to taste

4 large slices of good quality (not sweet) brioche
1 tablespoon (about) butter
a few sprigs of thyme and/or lavender blossom sprays
