Bunny Cuppy Cakes

I made pineapple flavored cupcakes with homemade buttercream frosting and homemade marshmallow fondant for decoration. Let me start by saying the marshmallow fondant was a real pain in the arse. Next time I make fondant, I will not take shortcuts. I will follow the actual recipe. Next time it should be easier to work with. Fondant issues aside, the buttercream recipe is a keeper; it is both uber rich, creamy and light all at the same time. Even Joshua, who doesn't care much for frosting, was asking for "more, please" (success!!).

While browsing through cupcake photos, here are a couple of things to keep in mind:
1. I've never made, nor used, fondant before. Ever. This was my first time.
2. I am not a pro-decorator. In the past 15+ years I can count on one hand how many times I've decorated (cup)cakes.
3. They are WAAAAY cuter in person (the pictures just dont do them justice)
4. Most important, they taste delicious!

**Note, there would be a full dozen, but a sneaky man-child had an attack of the midnight munchies, before the cakes were even frosted, and scarfed one down while standing in front of the fridge (so that I wouldn't hear him). Tsk tsk. Had he snuck a cake after frosting but before photographs, I'd be looking for a roommate right about now, while everyone else is wondering "whatever happened to Joshua? He was such a nice boy..."
