Cookie Recipe:
Soft and Chewy Chocolate Bites via Kraft.com

Yields about 5 doz. cookies. Takes 20 minutes prep time -- about an hour and 20 minutes total.

4 squares Unsweetened Baking Chocolate
3/4 cup (1 1/2 sticks) butter (butter is preferred since margarine has special instructions)
2 cups sugar
3 eggs
1 tsp. vanilla
2 cups flour

Preheat oven to 350 F. Microwave chocolate and butter in a large microwave safe bowl on high for 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour; mix well. Refrigerate 1 hour, or until dough is easy to handle.

Shape dough into 1-inch balls; place 2 inches apart on a greased baking sheets.

Bake 8 min. or just until set. It's very easy to overbake dark cookies like this. Don't walk away from the oven! Let stand on baking sheet 1 min; transfer to wire racks. Cool completely.

You can top the cookies with crushed peppermint pieces before baking, marshmallows before cooling, caramels, frosting, nuts, halved marachino cherries, the angry seme of your choice... go crazy. They're like little truffle cookies and very easy and inexpensive!

I'm thinking about baking up my basic stable of cookies (chocolate chip, peanutbutter, and snickerdoodle) this week or next and storing them in the freezer until it's time to assemble presents. That'll give me more room to work on new cookies and candies in the meantime. In my experience, cookies freeze very well, so if this works out for me, this might be the way to go every year! I have so many fun new recipes to try out and once again, two mommies to cook with. Christmas cookies are a big tradition here, oooh- and the sales at the grocery stores are so good right now!
