This recipe is based on one in a cookbook belonging to
greteldragon.
1 tin (400g) kidney beans rinsed, drained and roughly chopped
1 hand-full fresh coriander chopped (or a generous dash of dried)
1 small or half a large onion (the original called for red, but I use brown) chopped finely
1 grated carrot
Lots of grated cheese
1 squirt of tomato puré
2 or 3 medium tomatoes chopped
some chilli powder
some random spices
1 cup white wine (or stock if you don't have any wine)
[optional] about 300g of chicken, chopped and fried
1 medium bag of corn chips (~200g?)
Sour cream or guacamole
Fry the onion with the spices and the chilli for about 2 minutes
add the tomato, tomato paste, carrot, cook for a few minutes
add the wine or stock, cook for a few more minutes
add the kidney beans, coriander and chicken
cook for a little while. The mix shouldn't be very runny, but a little bit of liquid is alright.
Spread corn chips on plates or on an oven tray, cover with the sauce then the grated cheese.
put in the oven at 200C for about 10 or 15 minutes, until the cheese is melted and maybe just starting to brown.
Serves 2.
