Lumiere: When he and his father had their first argument about how stay-at-home classes should be treated.
Felicia: When she killed her first monster.
Arthur: When he realised that he might be king one day, and that was a real thing, and he'd be responsible for hundreds if not thousands of lives, and that was a real thing.
Caelan: When he left Winter's temple.
Simon: When he decided to be a dockworker instead of stealing stuff like most other rogues do.

Mikaela: When she realised that she'd never get a decent mission because her boss thought women were too delicate for the field.
