Potato Pancakes (easy peasy!)

My husband recently discovered these super cheap ($0.50) boxes of dehydrated shelf stable hashbrowns. Essentially there are just potato without seasoning. You rehydrate and do them up how you like. He likes them simply as hashbrowns fried in butter. I, however, took one look at the leftovers and said, "LATKES"!!

So, I cracked two eggs and scrambled them, added some chopped parsley and diced onion, sprinkled the mixture liberally with fresh ground pepper and sea salt then tossed in the rehydrated potatoes and got them fully coated.

Since I am trying to eat healthier I didn't fry them in oil as you are traditionally supposed to. Instead I used a light coating of cooking spray on my hot frying pan and scooped them into small pancake portions. Once they were all golden brown I served them up with applesauce.



End result? SO YUMMY and SO FAST!!
