Mousaka/eggplant lasagna

Sorry for all the cooking stuff lately, but it is the most joy I have at the moment.

Anyway, I've been craving lasagna for a while, but not eating the noodles, I was just left with meat sauce and cheese. AS good as that is, I wanted something a little more substantial. I was tweeting away about making it, and my Greek friend told me that I was making Mousaka. Hence the extra name. I learned a little of the history of the dish from her (which was fun), then made my modifications to the recipe that I found online.

I basically treated the eggplant (uncooked) like noodles, and assembled it the same way I would have any other lasagna. With the exception that I made it in 2 bread pans, and not either a 9x9 baking pan, or lasagna pan like I could have. I wasn't planning on making more than 1 bread pan, but I had leftovers. (I'm glad I did).

I added frozen spinach to my usual meat sauce recipe, and some bella mushrooms as well, mainly to bulk up the 1/2 pound of ground beef I had thawed. Seemed to work well, was a little watery, so next time I'll drain the tomatoes. Oops.

The end result was delicious.
