Well, I am feeling so much better today. I almost feel as though I'm totally healthy. Yea! I'm still sleeping well (although I didn't sleep quite as well last night as the ones before) and am getting around well. I just wish I could get all of the crap out of my lungs and not have huge phlegmy coughing fits each time I lay down. Still, they aren't as bad as they used to be so that's at least comforting. Also, I need to get my voice back. It's still hoarse and strained but it is getting better.
Not too much happening in my life right now. I did invent a great squash casserole recipe the other day. It's really simple so I'll print it here:
Easy Squash Casserole
1 box of Jiffy (or other cheap brand) corn muffin mix
1 drained can of summer squash (if you can't find this, you can use a bag of frozen and two boxes of mix)
1 cup grated cheese (whatever you prefer)
Prepare the corn muffin mix as directed on the box. Add the squash (if you're lowering sodium like I am, rinse the squash thoroughly after draining it) and cheese. Add pepper and any other seasonings you might enjoy to taste (I used about ½ a tablespoon of Penzey's Bavarian Seasoning). Stir well and spread in a well buttered pie plate. Bake as directed on box for cornbread.
NOTE: If you are using two boxes of mix (frozen squash or doubling the recipe), you must make sure that you bake it in a large enough dish so that it spreads out well. If you bake it in a smaller dish as you would for normal cornbread (8 or 9 inch square pan for two boxes of mix) it will not cook through properly and you will likely have to stir up the pan's contents and bake for a bit longer.
As you can probably surmise by the note I used the wrong size pan and had to stir and cook further. Still, the final result was absolutely delicious.
I have been catching up on my DVR'd shows each night. I am still adoring "Middleman" and "In Plain Sight". They are both very well written and sharp with plenty of little in jokes a plenty. The new season of "Psych" & "Monk" are also off to a great start. "Monk"'s tribute to the late Stanley Kamel was very touching and Hector Elizondo is doing a great job as Monk's new shrink.
More TV watching tonight. However, tomorrow night I will be getting out and going to a Fever game with our church. Our pastor's are competing in a free-throw contest and we get to cheer them on (plus everyone knows that lesbians love the WNBA).
