Pan fry two chicken breasts [with skin if you're that way inclined - which I am] in a little garlic, oil and butter to sear them and seal in flavour. Then dust with pepper [and a little salt of you're using the skins, this helps it crispyfy] and put in the oven to roast.

Roast potatoes. [which actually go in about ten mins before the chicken.]

Pan fry chopped mushrooms in the same garlic oil and butter for around five minutes. Add some pancetta and cook for a further 4 to 5 mins. Serve over the chicken breasts with the potatoes.

I'd add some stuffing but I ran out of ovenproof dishes.

I'd add vegetables, but meh [actually, broccoli and sweetcorn work pretty well but i'm feeling lazy]

You can also add gravy/stock as a sauce but in this case i'd suggest adding the garlic oil after straining.
