So today John and I will be making a very special dinner for one another as our Christmas gifts. This is something I came up with in lieu of spending a lot of money on each other, and instead doing something that takes effort and care and involves us spending some quality time together. I will be making beef wellington and john is making a traditional souffle and an asparagus dish (the details of which I am not aware).
Remember when I said we were doing this to avoid spending too much money? Well, the piece of meat I bought was $50 on its own. With all the rest of the ingredients I was up to about $65-$70. I know this may not seam like much to some people, but when you are making minimum wage, and paying rent and bills and student loans, this is a huge chunk of income. Needless to say it is well, well above what I had intended to spend.
Even so, I really hope it turns out well. I left the rib eye in the deep freeze before removing it yesterday, and it still had not completely thawed. I hope this wont affect its quality too much. I have never really done something so complicated as beef wellington before, and I am not a great cook to begin with. I will just have to follow the recipe and hope for the best.
