It's Cinco de Mayo!

A double-green day (5-5), but I suppose that's only if you see black-and-white characters in a rainbow of colors like I tend to do. (one of these days I need to whip up a VB program that'll let me type the way I see..)

Now granted, I'm only cooking for one (and on a laundry night at that) since I moved out from home last August, but I'm glad I haven't gotten over my urge to spontaneously try new recipes, especially when the occasion demands it.

Tonight's menu:

Spicy Pineapple Marinade for Chicken - this isn't new for me, but I haven't had it for a few years and when done right (i.e. when you're not looking up other recipes online or getting stuff from the dryer in the basement and thus not charring it), the jalapeno creates sparkles on your tongue in just the right way..

Adobo Rice and Black Beans - yum. This is a new one. I couldn't find the right seasoning at the supermarket, but I had a recipe at home. Needed a dash of salt, but that's fine.

Pineapple Margarita - this was all just an excuse to consume tequila (though I did go out and get a bottle of triple sec to finally do a proper 'rita). This is probably the first I've blogged about it, but I'm convinced tequila is a single girl's best friend. Happy discoveries: lime zest makes fab confetti and fresh-cracked sea salt is great around the rim (I usually never bother with salt, but since I was being proper for the holiday..).

Beware trying this at home, though, unless you think to marinate a day ahead of time and don't want to have dinner at 10:45 at night. But, oh, the rita makes for a good nightcap. You can't really get anything done after having tequila anyway, or maybe that's just me...although tai chi takes the buzz away like that *snaps*, but that's a whole 'nother story..

Edit: Ooh! While I'm at it: last night's dinner and today's lunch. Quick, simple, good for you, and YUM!
