Simple microwave dish:
1 medium eggplant
1/4 cup finely chopped parsley
1/4 cup breadcrumbs
1 tablespoon olive oil
2 tablespoons honey
1 clove garlic, finely chopped
salt
lemon juice
Combine all ingredients but eggplant and lemon juice. Slice eggplant into 1" thick rounds. Score top surface of eggplant with knife. Spread mixture on eggplant. Loosely cover and microwave 5 minutes on high. Uncover, microwave 2-3 minutes more or until soft. Drizzle with lemon juice just prior to serving.
