Eggs Ackly
Excellent omelet today. The shallots were caramelized 'just right' and the eggs, cheese and bacon were in proper proportion. Tabasco added before the omelet was rolled..and the roll worked perfectly. I might as well go back to bed, prolly won't do anything else as well all day long, no matter how I try.
