I've made Bear a banana pudding for his birthday every year for about five years.
Birthday Banana Pudding adapted from the Murray Vanilla Wafers box
1/2 cup white sugar
4 egg yolks
2 tablespoons unbleached white flour
2 cups milk
1 teaspoon vanilla extract
30 to 40 vanilla wafers
3 perfectly-ripe bananas, sliced
Mix together sugar, egg yolks, flour, and milk. Stir over medium heat until boiling. Remove from heat. Add vanilla extract.
In a 2-quart dish, layer half of vanilla wafers. Top with half of bananas. Pour half of pudding mixture over top. Repeat layers. Cover and refrigerate at least 2 hours. Makes 8 servings.
If you like your banana pudding with a meringue or with whipped cream on top, feel free to add it.
