Enchilada Lasagna adapted from The Abs Diet 6-Minute Meals for 6-Pack Abs

1/2 lb. very lean ground beef OR 2 boneless, skinless chicken breast halves, boiled, cooled, and shredded
1 1/2 cups reduced-fat Mexican-blend cheese (divided)
1 cup EACH canned diced tomatoes, drained; low-fat cottage cheese; and frozen corn, thawed
1/4 cup EACH canned jalapeno peppers, diced, and green onions, sliced
2 teaspoons chili powder
2 cloves garlic, peeled and minced or pressed
9 6-inch corn tortillas
1 cup taco sauce

Brown beef in a nonstick skillet.

Once cooled, combine with 1 cup of the cheese, the tomatoes, cottage cheese, corn, peppers, onions, chili powder, and garlic in a large bowl, stirring well to mix.

Coat an 11-by-17-inch baking dish with cooking spray. Place 3 tortillas on bottom of pan, and top with half of beef mixture. Add 3 more tortillas, and top with remaining beef mixture. Place 3 more tortillas on top, pour taco sauce over top, and sprinkle with remaining 1/2 cup cheese.

Bake at 375 degrees for 20 minutes (30 minutes if casserole has been refrigerated). Serves 4.
