I made Beef and Spinach Lasagna Roll-Ups for dinner last night. I followed the recipe almost exactly, but I bought regular dried lasagna noodles, boiled four of them, and then ran cold water over them so I could handle them. Also, I used more than one cup of spinach. It took a long time to make dinner, but it wasn't difficult--just a bunch of steps. I ate one roll and Bear ate two, so I have one left for lunch today. I baked frozen garlic bread and made homemade dressing to go on bagged salad:

"Kick-Ass" Vinaigrette from a notebook of recipes at the house where I vacationed with my parents in Avon, NC, last year

3/4 cup extra-virgin olive oil
2 tablespoons red-wine vinegar
1 tablespoon orange juice
1 tablespoon Dijon mustard
1 small garlic clove, pressed
1/2 teaspoon salt
2 1/2 tablespoons sugar, or to taste (I used 2 tablespoons)

Combine all of the dressing ingredients in a jar, seal the lid, and shake vigorously until emulsified, about 20 seconds. The vinaigrette can be refrigerated in the tightly sealed jar for up to 1 week. Makes 1 cup (to dress 4 quarts/12 servings of greens).

If anyone wonders why I'm up at what birthingway would call ass o'clock in the morning, well, Bear decided to go to sleep at 8:30 last night and begged me to come with him, because he doesn't sleep very well if I'm not in bed. So I got up with him at 5 a.m. Cut up some melon and nuked a chocolate VitaTop for breakfast, dug out my Tea Maker from one box and my favorite loose tea from a different box and brewed a mug of tea, and have been playing with our new DVR, setting it to record all sorts of sensational cable shows, like Mystery Diagnosis. :p

Now that we live in a state with a state income tax, between health insurance and taxes, Bear will be bringing home half of his "on paper" salary. It's going to take us five months (ten paychecks) to repay the money his mom loaned us to help us move. We were talking about not refilling my bc pills when they run out in September, but I guess we'll have to see where we are financially. Non-nurse midwifery is not legal here, so if we want a homebirth, the cost will be completely out-of-pocket, and I don't want a hospital birth just because it's cheaper. (Seriously, that's the absolute worst reason I can think of to have a hospital birth!) Of course, I'm also wary about having a homebirth in an apartment--don't want to scare the neighbors. :p

Speaking of neighbors, I met one day before yesterday. She's a stay-at-home mom to two and used to be a nanny. In other words, I might have a friend here. Especially since she had her baby in a Mei Tei carrier on her back. :) Baby-wearing is a good sign, right? :)

Today I'd like to finish unpacking the kitchen and find the closest library. Baby steps, right?
