It's occurred to me that I've been reading and writing fan fiction for over ten years, so I like to think I've got decent taste. Often you want there to be an emotional plot (but NOT a purely romantic-based one, especially in long fics) alongside the regular one. So if you want your character to change realistically let them have setbacks let any other plot-line. It also work nicely if he or she aren't entirely aware of this plot-line.
To avoid the dreaded rose-tinted glasses, I find writing characters you dislike help. (I tend to do this inside my head since writing full-fledged fic is too time consuming.) Also as I mentioned before writing characters you like in a manner that makes you want to strangle them or get embarrassed for them.
Yeah, it's interesting how many people have indulged without even knowing it. It makes me wish that people who had an interest in that sort of thing knew where to look to find the good stuff. It's amazing how many people think all fanfic is crap. I frequently watch people look at me leerily when I mention I write fan fiction. I suspect they've run into the Harry Potter smut written by thirteen year-olds.
