Hey All,

So today has been pretty laid back, but I did end up doing fridge scouring and got creative....I had some leftover steak and cubed potatoes (about enough for 1 person) and the better part of a sweet potato that was going bad.

So I put some olive oil and 2 TBSP of butter in the skillet, and started it melting on pretty high heat. Then added about two cloves of garlic. While that was coming together, I diced up the sweet potato and about half a med yellow onion, cut into 1/4s and then sliced.

So in go the sweet potatoes and onion to start cooking up. At this point I reduced the heat to about medium. I pulled out a med handful of dried shiitakes and started them rehydrating in hot tap water. An interesting note here, dried shiitakes at the asian market cost a helluva lot less than fresh (I pay like $8 for a pound dried, that's roughly 3 lb rehydrated which would be about $90). They do taste a bit different, so a good long soak is usually in order and they are no substitute for fresh when you need fresh, but they do well in most of my casserole type dishes. Next was a bunch of brocolli, the crowns cut, the stalks given to the dog (yes, my dog eats brocolli stems). I set those aside while I cubed up the steak.

Then into the pan with the brocolli, cooking it just enough to make it sweat. A good couple of stirs of the pan, then in with the steak, potatoes, and rehydrated shrooms. I let it steam on medium for a few minutes, then cranked the heat up for my sauce:

The sauce was simple, but tastes awesome:
1TBSLP Maple syrup
1TBLSP Lemon Juice
1Teaspoon soy sauce
Several drops of liquid smoke
and about 1/4 cup water. Stir it up and throw it in the pan to deglaze and get a good steam going. Cook for about a minute, then turn the heat off and let it sit about 3 more min.....however long it took me to clean the prep dishes, which I think was ~3 min.

Then toss it in a bowl and enjoy! Protein, starch, and veg all in one tasty lil' dish.
