This year I want to teach myself to make the following things really well. I'm pretty sure I've made most of these before, but on a one or two off basis where it may or may not have really been successful.
Pilaf
Risotto
Pizza dough
Lighter bread (my bread has in the past tended to be a little dense)
Pasta from scratch
Also I want to do more with desserts. I've done jams, pies, and ice cream. Ive never properly pulled off stuff like souffle or panna cotta. Oooh, and a crepe. I don't really have the right pan for that, but I did see this thing done once by alton brown where he flipped over a pan...
Really I kinda want to teach myself more about food. I do a lot of mucking around, but Ive not done a lot of the classics.
Unfortunately I'm kinda starting from scratch kitchen wise, meaning I'm building up from not much. Tomorrow I go in search of a proper spatula. 'cause my flatmates don't have one. I can't wait until my knife gets shipped to me. I miss having a good knife.
