He's worried as hell. That's his only viable excuse. The words just sort of fell out, because Levi going off with another guy in this state shouldn't bother him - because seriously now, Levi doesn't know him, Shane definitely doesn't intend to be anything other than a friend for the duration thanks to his recent blood problem, and, well, Levi is Levi, no matter the decade - but in this case, said other guy was a vampire, and... and if anything bad happened to Levi while he was human, Shane probably wouldn't be able to forgive himself. Levi spent months making sure Shane was okay before that night in January. Shane feels it's only right to return the favour.
So now he's said it without thinking, anything to diffuse the situation, and now Levi is staring at him, and now they're completely alone. Both metaphorical feet in his mouth, Shane is finding that he has no idea what to say next.
This could be so much easier if Shane were actually any good at lying to Levi. Still... he can try.
