So, I've got a craving for peanut butter pie. The one Denny's did 10+ years ago, with actual peanut butter filling that tasted just like a reese's. Alot of the recipes I'm finding are chocolate pudding with a little peanut butter mixed in. Bleh. So I did some hunting around, and found this:
PEANUT BUTTER PIE
1 c. powdered sugar
4 oz. cream cheese
1/2 c. peanut butter
1/2 c. milk
8 oz. Cool Whip
1 chocolate graham cracker crust shells
1 Reese's peanut butter cup candy bar (frozen)
Whip powdered sugar and cream cheese until creamy. Add peanut butter and milk, mix well, and add about 6 oz. Cool Whip. Pour into pie shell. Take frozen candy bar and chop up into little pieces. Sprinkle over pie, decorate with the rest of Cool Whip. Freeze pies or just put in refrigerator to firm. 10 servings.
Now, I hate cool whip. With a passion. So I'll replace that with the obvious, whipped cream. Powdered sugar. The only reason I can think of to use that is that it dissolves easily. Since I have some 10x to use up, I'll go ahead and use it this time, but afterwards, I'll use regular sugar. If I take the time to properly cream the sugar and cream cheese, it will aerate the mixture, and help to lighten it a little. The filling had a dense taste, but not mouthfeel. Hope like hell you all understand that! I'll probably reduce the amount of sugar later, in future runs. Making your own cookie crust is stupid easy as well, so I'll make my own. (OK, slight aside here: I've been trying over the past few years to reduce the amount of sugar and chemicals Mike and I eat. Diabetes runs in both our families, and well... I dump enough chemicals in my body to deal with the MS, so I'd prefer to reduce it everywhere else possible. )
