Hello! I come to share my culinary adventures...
Recipe for a chicken curry-ish thing. Serves two.
Ingredients:
N.B. These are the amounts I used, for my own future reference; actually I think it could have done with a little less of some of the spices, I got a little carried away. But it was still nice.
- approx. 300g chicken (enough for two people)
- 225g chopped tomatoes
- half an onion (sliced)
- teaspoon-sized helping of sliced ginger
- 3 tsps ginger paste
- 1 (large) tsp tomato puree
- 8 cloves
- 8 black peppercorns
- 1 tsp ground cinnamon
- 1/4 tsp chilli powder (or to taste)
- 1 cup of water
Method:
Fry the onion (in ghee, possibly) with the sliced ginger until golden. Add peppercorns and cloves, then ginger paste, tomato puree, cinnamon and chilli powder, and fry a little longer.
Add the chicken and fry for five minutes or so, then add chopped tomatoes and water.
Simmer/boil until the sauce has reduced to your desired consistency, using common sense to make sure everything's cooked thoroughly.
(Btw, I usually use Tesco frozen chicken tikka - it's quicker, because it's precooked, and it's also cheaper and less bother what with it being pre-sliced.)
I served it with medium noodles, but it would probably work ok with some sort of bread (naan, etc.) or rice.
