Ingredients:
1 1/2 tsp chopped onion
2 tbl butter
1 1/2c fresh bread crumbs
1c chopped apples
2 tbl chopped celery
1 tsp chopped, fresh parsley
1/8 tsp salt
salt
pepper
3 thick pork chops
1 1/2 tsp olive oil
Directions:
Preheat oven to 350f
Saute the onion in butter until tender. Remove from heat and add bread crumbs, apple, celery, parsley, and salt. Mix it all together.
Uct a large pocket in the side of each pork chop, being careful not to hack the pork to pieces like I did.
Season inside and out with salt and pepper to taste.
Spoon stuffing loosely into pockets
In skillet, heat oil to medium high and brown the chops on both sides.
Then place browned chops in ungreased baking dish.
Cover with aluminum foil and bake for 30 minutes or until done.
