I have had my ass thoroughly kicked in the chicken pot pie race by my own beloved
darkwolfie. My version is from the back of the Bisquick box -- undiluted cream of chicken soup, frozen veg, chunked up cooked chicken, Bisquick batter on top. It's good enough for a quick and filling meal, but I have problems getting the batter cooked all the way through before it burns on top. The uncooked batter won't hurt you (I don't think), but it's gross. I've already decided that I need to heat the goo before I pour the batter over and try to bake it.
darkwolfie took my recipe tonight and ran with it. He boiled the chicken in yummy good stuff, rather than cooking it in the microwave (remember, my recipe is built for speed), and added fresh vegetables: potatoes, carrots, green beans, and some sugar snap peas. He used a bigger pan than I (9x13 v. 8x8) and three cans of soup to my one, plus he added cooked stuffing mix to the bottom of the pan before he baked it all. He made one batch of the Bisquick batter, which made a much thinner topping, which in my opinion was perfect for this version.
It was delicious. The only issue was that he cooked the potatoes in the microwave, and the larger pieces didn't cook. There are lots of leftovers, though, so they should soften up as we reheat them.
I'm proud to say that he kicked my butt in this particular race, because I get to say that my recipe was the inspiration. And I got fed.
