This was found on (and adapted from)
lauralei's LJ. I haven't tried them yet, but just wanted to save the recipe. She said that with Nayo and lettuce that they'd remind her completely of McDonald's Fillet-o-Fish burgers. Since we've been eating wraps, garden patties and fake "chicken" burgers often this month, I may forget about making this until later.
Chickpea Burgers
2 cups chickpeas, mashed (by hand or food processor)
1 stalk celery, diced
1 carrot, diced
1/4 cup finely diced onion
1/4 cup flour
Salt to taste
2 Tbs vegetable oil
Mix first 5 ingredients then add salt to taste. Fry burgers in the oil for around 7 minutes, flipping the burgers more than once during the cooking time. Fry until the sides are golden to ensure that they're well-cooked. Makes 6.
