Shawn and I had a bunch of ground beef that needed to be cooked to prevent it from spoiling. Now we have a lot of beef, and are trying to find uses for it (spaghetti, tacos, etc.).
I had an extra sweet potato after my holiday baking was complete, and this recipe called for using it in a modified
shepherd's pie. It turned out pretty well, so I figured I'd pass it along to those who are interested.
It's not normal shepherd's pie, but it's a very interesting take on it. I added cheddar cheese on top and a slight bread crumb layer to give it some extra crunch. When I make this next time, I'll add significantly more cheese to the top. =)
