Tamara's Famous Roasted Potatoes (Healthy and Delicious)

5 small-medium red and yellow potatoes (the kind where you can eat the skin)
6 garlic cloves sliced (chopped is too small)
olive oil
fresh ground pepper
garlic salt
all purpose salt free seasoning

1.  Preheat oven to 400F

1a.  Wash the potatoes thouroughly and take out any obvious eyes you may not want to eat

2.  Cut the potatoes in 1/2 to 1 inch cubes (some will have skin) (the bigger the cube the longer cooking time is, but also less likely to burn)

3.  Pour olive oil into a casserole dish (I used to use pie plates before I had casserole dishes) until the entire bottom is coated no more than 1/4 inch

4.  Put potatoes in casserole dish over oil, they should cover the entire bottom and not be piled too high.

5.  Sprinkle with pepper, garlic salt, and all purpose salt free seasoning all over the potatoes.  I do this generously, because I like seasoning.  When Mike makes these, he never puts enough seasoning on them and they taste boring.  You should SEE each spice mixture as you're pouring it on.

6.  Mix up the poatoes with the oil and seasonings with a spatula and place dish uncovered into oven (even if it's not all the way up to 400 they can still go in)

7.  Check on potatoes every 15 minutes.  Remove them from oven and stir them around.  You don't want the ones on top to be done and the ones on the bottom to be undercooked.  Plus, this keeps them covered in oil throughout so they don't burn.

8.   30 minutes into the baking, add the garlic during the routine stir.  If added too early they could burn.

9.  They should be done in about 45-50 minutes, sometimes an hour, depending on the size and amount of your potatoes.

10.  ENJOY!!!!

Also, if you're cooking something else in the oven like roasted asparagus with lemon and breadcrumbs (yum) or a steak or chicken cutlets, it won't really affect the time it takes to cook the potatoes, but it will affect the time it takes to cook your other dish.
