Australia. Pretty sure it won't happen, but my sister invited me to go explore the land down under with her if I had the funding when she goes backpacking. However, backpacking is too slow and unpredictable for my liking. What I would really like to do is ship a pair of motorized bicycles on ahead for transportation. (I think that would be feasible. They are light enough that shipping costs shouldn't totally murder us.)
At least one of them should be a longtail cargo bike, due to the fact we would be using these for gear transportation as well as personal. Of course this would be for coast-only driving. Any interior exploration would have to be by train. Much as I would love to see Coober Pedy, I'm nowhere NEAR insane enough to try traversing hundreds of miles of uninhabited terrain on a slaptogether powerbike.
Aside from Australia's underground city, I would like to see Sydney, the Melbourne/ Warrnambool area (for obvious reasons. Hi Darkie :-P), Canberra, Perth, Brisbane, Townsville, (Hell the whole eastern coast would be awesome to see). The otherworldly beauty of Lord Howe island. That two-hundred mile stretch of dead-straight rail on the Nullarbor plain would be awesome to see as well... from the safety of a train of course.
Heard stories from dad about his "Walkabout" back in the 70's before he met mom, and have always been fascinated by the country.
But as I said, touring Australia is most likely one of those things that funding (read: a lack thereof) or life will probably conspire to prevent me from ever doing.
Still, I can dream.
