I really should have called it leftover soup. I was trying to clear out my fridge and freezer to make room for the new groceries that I had bought, without checking what’s in my fridge first, becoz I’m smart like that!
Anyways, at the end I had 1 sorry looking leek and 2 small chicken drumsticks. Without even thinking I just threw in the chicken and the leek (sliced) into a pot, added a handful of rice, the tail end of my liquid stock pack, enough water to cover the chicken and let it simmer away for 2 hours or so. I actually kinda forgot about it. I got too wrapped up in doing the chores whilst pretending I was in the SECC singing “Mama told me not to come” with Sterophonics and Tom Jones (I know! How sad am I?!?!).
Anyways, I digress, when I got back to the soup, it was AMAZING! It was sooo full of flavour and yet so light. Just what I needed :) I don’t know why I never made this before!
