Prosciutto and Mushroom Risotto with Roast Chicken

It took me a while to find the right risotto rice. The one i used was arborio rice. its hard to find good risotto rice, there are lots of ready meal risotto or ones that come in a pack, like a ready meal but u cook it yourself. what i wanted was the rice itself, like 500g of arborio rice. I found it in Sainsbury's.... but i wonder if maybe they've always had it and i just neva looked properly.... that's prolly the case. Anyways! here's the recipe.

Prosciutto and Mushroom Risotto with Roast Chicken



  Ingredients:
 1 onion diced
 a handful of diced prociutto
 a handful of sliced mushrooms
 1/2 mug of rice
 chicken stock (you can use vege/pork/beef)
 Salt and pepper to taste
 oil

Method:
Heat some oil in a pan. Add onions and fry till soft. Add the procuitto and fry for a further 2 mins before adding the mushrooms and rice. Mix well to ensure the rice is well coated. Add a ladleful of stock and stir. Keep adding one ladle of stock until the rice is cooked(soft). Season and make sure u taste it a bit to see if it needs to be cooked for longer.



And that's it! Easy Peasy. We had it with roast chicken, although martin didnt really eat all of his chicken.
