It's the time of year to harvest those herbs and greens and enjoy! Home made salad dressing is much better than storebought. Healthier, and sugar-free. Plus you can tweak the ingredients based on what you have on hand and what you like or don't like. You could even make it non-fat by excluding the oil.
Ingredients:
1/2 tsp onion powder
1/2 teaspoon salt
1 teaspoon black pepper1 small garlic clove, pressed
1 teaspoon dijon mustard
1 teaspoon fresh oregano
1 teaspoon fresh basil
1 teaspoon fresh parsley*
1 teaspoon fresh dill*
3/4 cup cold-pressed, extra virgin olive oil
3/4 cup vinegar
Juice of 1 lemon
* = optional. I have them in my garden so I add them.
Directions:
Combine all ingredients in a blender (nutribullet works great) for 15-30 seconds.
Store any leftovers in an air-tight container in the refrigerator, lasts up to a week. Mason jars are perfect! Like most dressings, the flavour will get better as the ingredients meld together, so for best results, wait at least 30 minutes before serving over your favourite salad ingredients.
