Growing up pancakes were never my favorite. I mean, they were okay, but I would much have preferred eggs and toast. Since the summer, pancakes have been something I crave - usually late at night.
Better Homes and Gardens, which my mother subscribes to, did a little feature on pancakes in January of 2007 and I found it this summer and snagged all the pancake recipes. There were some really interesting ones and recipes for toppings to go with them.
My favorite was the chocolate pancake one, which I modified to be even darker chocolate and dairy-free.
1 2/3 c.all purpose flour
2/3 c. unsweetened cocoa powder
1/2 c. sugar
1 t. baking soda
1/4 t. salt
2 1/4 soymilk
1 egg lightly beaten
3 T. oil
Sift the dry ingredients together (man, I need to get a sifter), wisk the wet ones. Cook like normal pancakes. You know they are ready to flip when the edges look dry - neat little trick from BHG.
Serve with the standard butter and syrup, top with ice cream, or make two leftover ones into a peanut butter and banana sandwich for lunch.
