In early July, Adam and I spent the better part of a Monday getting ready for our week at Cornerstone. The night before we made previously mentioned granola bars and that afternoon we made salsa to accompany the tortilla chips I had leftover from the summer solstice.
Adam didn't use a written recipe. He just showed up at my house with bags of produce and ordered me to start chopping. It was fabulous in the end, so I will try to put it into words for you:
Primary Ingredients
roma tomatoes - split, scoop out seeds to prevent soupy salsa, then chop
A combination of red and white onions - chopped
Secondary Ingredients
Lots of big juicy green olives, finely chopped
Whole garlic cloves - peeled and chopped
Lots of coarsely chopped fresh cilantro
Finely chopped jalapeno peppers - to taste and desired heat
(We used garlic stuffed olives. intense.)
Seasonings
Fresh squeezed lime juice
just enough salt to enhance flavor without making it taste...salty.
Just mix it all up in a bowl. Everything can be adjusted to taste, really. You can make as much or as little as you will use in the next few days. We almost filled a large jar that we later used for pickles.
