The NPL is a puzzle organization, so outside of the main program of games and puzzles, there's a lot of unofficial game-playing and puzzle solving. I'm leaning toward the middle option (before 2000), except that it'll cut off most of the reality TV explosion.

How do I do eliminations?

Maybe eliminated players are automatically recruited to help the hosts. They have to play in live skits (in minor, mostly non-speaking roles), wear the funny costumes/accessories, etc. You could even have some way for them to earn the right to return in reruns.

Should I throw food at the players?

Do you have to ask? (In fact, throwing food at the remaining players is exactly the sort of thing an eliminated player might enjoy doing.)

I guess not, but it seemed so appropriate.

Well, the snack break happens before eliminations. I'm mostly worried about cleanup.

If you wanted video skits, perhaps you could ask TMcAy if the hotel has an A/V setup that we're already paying for and record a DVD.

I'm trying to avoid limiting myself to a particular area for the game. I can take the iPod anywhere.

I think since the show ran at the end of the '80s but focused a decade or two earlier, it might be fitting to focus the questions on the late '80s as a throw back to the origins of the show itself. However, I do not know the average age of the con goers. So that may work or it may not depending on how well they would know the pop culture from that period.
