Five layer yumminess

I made a five layer vegetable strata in a slow cooker my mom bought at Montgomery Ward about 25 years ago. It works like a charm. I am amazed at the crock pot's durability. It was made in Japan in the days when people complained that Japan was taking over the world.

I am on a vegetable and fruit only week. No bread, no pasta and no pastries. My body needs the break after weeks of candy and pie. I may go into shock.

The strata has potato, zucchini, onion, red pepper and tomato covered with a bean-homemade pesto sauce. That will cover lunches. What to do about dinner? Maybe falafel or quinoa.
